3min Choc-Hazelnut Pudding

This is my first Sunday morning post but is only the start of many. Sunday is my favourite day, it’s when I’m in my cooking zone which for me is one of the most relaxing activities.

I use Sundays as recipe-experimentation day, food prep for the week day, baking day and I always try to cook a Sunday dinner which is a bit trickier or that takes a bit more time, tonight’s dinner is going to be slow roasted pork belly with roast veggies and fresh made apple cider sauce.

My recipe post today is going to take us back to last Sunday, a big experiment day for me. We were heading to friend’s for dinner so I thought it would be the perfect opportunity to create a new dessert/sweet treat and use my unaware friends as guinea pigs! Earlier in the week I’d seen a post on Facebook of a microwave self-saucing pudding which was full of grains, dairy and sugar (a.k.a my three nemesis-es!) so I was determined that I could create something just as good with far more nutritional value!

What I love about this recipe is that it fuses two of my favourite flavours, cacao and hazelnut. Now, I know that hazelnut can be acquired taste, some find it too bland/bitter, but for me I just can’t get enough! The inclusion of raw cacao and raw honey means this little dish is full of wonderful antioxidants so not only does it taste yummy there are so many other benefits.

I have to say, the experimenting process was FUN but never without a bit of risk, it got to the point (I think about 6 eggs in) that I thought to myself “oh well, I’ve nearly got it” so my final attempt was actually at my friend’s place after we’d eaten dinner and were ready for dessert. Thankfully it was a success and thoroughly enjoyed by all (unless they are all a bunch of dirty liars!!) so now is time to reveal up here and give you all some inspiration for a wholefood alternative to the usually highly processed, glucose packed toxic dessert options that most people are used to reaching for.

Oh, did you notice the title to this post says 3 minutes… yes 3 minutes! No joke here, this is so easy, quick, yummy and nutritious that you really can’t go wrong.

Enjoy and hopefully you can all re-create it just as tasty but maybe a bit prettier than my attempts!


  • 3 tablespoons hazelnut meal/ground hazelnuts
  • 1 tablespoon raw cacao
  • 1/2 teaspoon ground cinnamon
  • pinch of salt
  • 2 tablespoons raw honey
  • 1 teaspoon vanilla bean paste/extract
  • 1 egg
  • 3 tablespoons boiling water


  • Combine hazelnut, cacao, cinnamon and salt in a medium-sized ramekin and mix until combined
  • Add honey, vanilla and egg to the dry mix and mix until well combined
  • Carefully pour the water on top (this step will give you a bit of a “self-saucing” element but I tried with and without and both ways were nice so it’s up to preference!)
  • Microwave on HIGH for 30 seconds (you may need to do your own experimenting here as all microwaves are different so best to start cautiously at 30 seconds and zap in extra 10 second increments depending on the heat in your microwave, the last thing you want to do is dry this little baby out so use your eyes and touch here to see what is the perfect time)
